A Pandanful Twist on Tradition: Nuvojoy's Low GI Kuih Talam | Low GI Recipe

Singapore's love for pandan goes beyond just a flavour - it's a cultural touchstone, a fragrant memory woven into the fabric of our culinary heritage. And what better way to celebrate this love than with a delicious twist on a classic? Nuvojoy's version of Low-GI Kuih Talam is a modern take on the traditional Malay dessert that promises all the smooth, fragrant goodness without compromising on health.

Ready to embark on this fragrant journey? Let's dive into the simple steps:

Ingredients:

Pandan layer:

  • 20 pieces of Pandan Leaves
  • 20g of Water
  • 50g of Nuvojoy's Low-GI Coconut Pudding Premix

Coconut layer:

  • 100g of Water
  • 50g of Nuvojoy's Low-GI Coconut Pudding Premix

Instructions:

  1. Start by chopping pandan leaves into fine pieces, then blend them with 10g of water until you have a vibrant green pulp.
  2. Pour the blended pandan into a pot and bring it to a gentle boil with the remaining 10g of water, releasing the aroma of pandan into the air.
  3. Once ready, strain the pandan juice, separating the emerald green liquid from the pandan leaf pulp.

Making The Coconut Layer:

  1. Gather the pandan juice and 20 grams of water in a big bowl. Add Nuvojoy's Low-GI Coconut Pudding Premix (50 grams) and whisk them together until smooth.
  2. Pour the batter into a pot and bring it to a gentle boil, stirring occasionally to ensure even cooking.
  3. Shift it into a silicone or heat-resistant mould, and let it chill in the fridge for two hours, allowing it to set into a delightful emerald layer.

The Final Touch:

  1. Prepare the coconut layer while your pandan layer cools down. Boil 100 grams of water and add Nuvojoy's magic again by whisking 50 grams of the Low-GI Coconut Pudding Premix.
  2. Once the coconut mixture reaches a gentle boil, let it cool slightly before gently pouring it over the chilled pandan layer.
  3. Back to the fridge, it goes! Let the magic of time set the coconut layer for another 2 hours.
  4. After 2 hours, gently unmould the dessert and enjoy!
