Beyond Madeleines: A Lemon Curd Tart Twist on Nuvojoy Premix | Low GI Recipe

Ingredients:


For the Madeleine Dough Base:

  • 1 package Nuvojoy madeleine premix
  • 1/2 cup (1 stick) unsalted butter, melted and cooled
  • 2 large eggs
  • 1 teaspoon vanilla extract (optional)

For the Lemon Curd Filling:

  • 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
  • Zest of 2 lemons
  • 1/2 cup allulose
  • 3 large eggs
  • 1/4 cup unsalted butter, cubed

Instructions:

  1. Preheat your oven to 350°F (175°C). It's time to whip up that base! Whisk together the madeleine premix, melted butter, eggs, and optional vanilla extract in a bowl until you have a smooth batter.
  2. Grease your tart pan. Press the batter evenly into the bottom and up the sides of the pan, creating a beautiful tart shell.
